Healthy Banana Bread (GF)

Hi Everyone, One thing that has given me comfort during quarantine is baking. This hearty banana bread has just the right amount of sweetness and a wholesome taste! Perfect for breakfast, snack or dessert.  

Banana Bread Ingredients:  

  • 1 cup ripe bananas mashed (about 3 large bananas)

  • 3/4 cup of almond flour

  • 1/3 cup coconut oil, vegetable oil, or olive oil 

  • 2 Large eggs or vegan egg substitute

  •  3/4 of water 

  • 1 teaspoon of cinnamon 

  • 1 teaspoon of baking soda 

  • 1/2 teaspoon salt 

  • 2 teaspoon vanilla extract 

Feel free to add your own extras like coconut shavings, berries, dates, walnuts or nut butter frosting (Almond butter, peanut butter, etc). Have fun and get creative! (I would recommend 1/2 cup).

Preheat the oven to 350 degrees (F). Line the bottom of a loaf pan with parchment paper and grease the side of the pans with coconut oil.

Pour batter into the lined loaf pan and bake for 45 minutes to an hour. Allow the  bread to cool in the pan for 15 minutes then transfer to a wire rack. Let bread completely cool before slicing.
